Lucky Veggie Dip

One night while the kids were playing outside, I pulled out my reference books and I started to ponder what spices and seasonings would go great with specific veggies.  Then I asked… what are the similar spices? That was the birth of this recipe. It took me a while to think of a name, but I came up with “Lucky Veggie Dip” naming this dip after my favorite farmers, Luckett Farms. So thankful to have farmers near by who grow and sell seasonal produce.

This dip was served at the Girls Night Out held in Downtown Denham Springs put on by Mothers and Daughters in May. The ladies loved it so much I ran out of dip! Luckett Farms provided the veggies, and we set up at Cavalier House Books. It was a very fun night (and we sold out of Seasonal in Louisiana magnets to boot!).

Lucky Veggie Dip
A wonderful dip for veggies and some crackers.

Ingredients
  • 8 oz goat cheese softened
  • 1/2 c mayo
  • 1 t basil
  • 1 t garlic powder
  • 2 T green onions chopped
  • 1 T parsley chopped
  • 1/4 t salt (or to taste, mayo has a salty flavor, so be sure to try it).

Ingredients
  • 8 oz goat cheese softened

Instructions
  1. Put all the ingredients in a bowl.
  2. Mix with a hand mixer, I start on the slowest speed and the as things mix together, I make the mixer go faster till the dip is well blended.
  3. Refrigerate overnight or for two hours if you need it sooner. Enjoy! KS
